Raisin wines are produced using the same vinification techniques used for normal wines, with the only difference that the grapes, before being vinified, are subjected to drying for a longer or shorter period of time, ie to a reduction or elimination water (dehydration) present in the berry.
There are also passito liqueur wines or wines made from dried grapes and added with an alcohol component. Within the denominations, the most famous Italian liqueur passito is undoubtedly the liqueur version of the Passito di Pantelleria DOC.
