Mezcal is a brandy obtained from the distillation of a fermented agave juice that has undergone heat treatment. Its aroma and taste are more rustic and rough than the Tequila, but they are definitely characteristic. Many productions are also characterized by obvious production defects which, however, should be experienced as a quality in the name of typicality.
Almost 30 species of agave are used to obtain auguamiel, the juice of agave cooked in ovens.
